Ultimate Fudgy Brownies
My cousin says my mom makes the best brownies he's ever had. Granted, he's from Spain so you could argue he doesn't know what a good brownie is supposed to taste like, but he's well traveled and has eaten good food from other countries, and he still says her brownies are the best. Then he had one of my brownies, and he unwillingly said with a half smile on his face and a slight nod, that: "yeah yeah, your brownies were better." Here is the brownie connoisseur's approved, ultimate recipe.

Instructions
- 1
Pre-heat the oven to 350°F.
- 2
Butter a 9x9 square pan, or whatever baking dish you like, it doesnt have to be square actually, you do you. Then line the dish with parchment paper.
- 3
Melt the chocolate and butter in a double boiler (this is a metal bowl over simering water in a pot). Stir often to mix the chocolate and butter, and then once melted, take off heat and let it chill. While it's melting though, you can start with the dry.
- 4
In a medium bowl, mix white sugar and brown sugar together, then whisk in eggs one at a time. Then add the salt and vanilla.
- 5
Once the butter and chocolate mixture is cooled for around 5-10 minutes, add it in and enjoy the pretty swirls.
- 6
You're supposed to sift the flour and cocoa powder but I don't really do it and nothing ever happens so its up to you. Maybe when I have more time I'll sift it but that's once in a blue moon and I can't tell a difference in the end result. Add the dry to the wet in 3-4 portions, and slowly fold into the batter.

Pour the batter into the pan and stick it in the oven for 15-20 min. It is VERY important that they do not over cook, this is KEY for the brownies to be delicious. I don't care what you say, they have to be almost pure batter in the middle. Once the time goes off at 15 minutes, check them, and if you think they need 10 more minutes, they are done and you should remove them immediately. Actually, I would check on them every 5 minutes from when you first put them in the oven to make sure they're not baking too much.

Once removed from the oven, let them cool for 5 minutes, and serve them warm with a scoop of your favorite vanilla ice cream.
